I have a migraine, so I built this out of a beer can (Pilsner), a coat hanger, and a candle. It works. It’s ghetto. It’s fabulous.

Vegan Tacos (But they still taste good)
Make some Brazilian rice:
- sauté your rice for about 10 minutes in a good amount of olive oil and finely chopped onions, add a bit of chopped tomato in the last minute of the sauté
- pour 1.25-1.5 times the amount of lightly salted BOILING water over the rice, cover and reduce heat to low-medium, and let simmer for appropriate cooking time (e.g. - 15 minutes for white rice, 45 for brown rice)

Warm-up some CORN (soft) tortillas, they’re far more authentic tasting than wheat tortillas or hard-shell corn tortillas.
Chop up some fresh cilantro and tomato.
Chop up some bell peppers, jalapeño, and mushroom into small cubes (like 1/4” sides, 1cm cubed), the continuity of size creates a texture that is beneficial to the success of this dish. Sauté the mixture in a good amount of olive oil, and DON’T OVERCOOK THE VEGGIES! In the last 30 seconds of the sauté, introduce a hearty amount of chili powder, cayenne, and chipotle powder (if you have it). Salt to taste.
And make sure there’s some good hot-sauce(s) on the table for dinner!
